Materials are used to harvest, transport, process,
and package our foods, and can play a critical role in preventing food waste and
loss. We have shown that antimicrobial and antioxidant agents can be bound to polymer
materials to mitigate food spoilage and loss.
In this talk, Dr. Goddard highlights research
from her group on the synthesis of antimicrobial and non-fouling polymer coatings to prevent
adhesion, survival, and cross-contamination of bacteria that can cause spoilage due to
post-processing contamination.
