Safety: Endless Opportunities to Make an Impact
Compared to other parts
of the food system, research and practices related to produce safety are early
in their maturity. At the same time, produce represents the largest segment of
the food system consumed without a “kill step”, and its role in a healthful
diet is well recognized. This creates many opportunities for individuals
seeking to make a difference. This discussion will provide historical context
for the key issues facing the produce industry, and identify current and future
areas for exploration.
